Hard to know exactly what synth he used, though here's a list of the keyboards Frank Zappa's keyboardists used.

Here's a recipe (settings will vary from synth to synth):

Oscillator

  • Oscillator 1 Waveform: Saw

Filter

  • Type: Low Pass
  • Cutoff: 65%
  • Resonance: 75%

LFO

  • Waveform: Triangle
  • Destination: Filter Cutoff
  • Amount: 10%

Voices

  • Mono
  • Glide/Portamento: 15ms

Distortion

  • Amount: Just a little, for saturation and a bit of grit
